Why the latest days are left out, and when a change is like for like.

The most recent days are left out on purpose. Google Analytics keeps finishing its figures for about 2 days, and Search Console for about 3. Counting those days would make every week look worse than it was, so each window ends at the last complete day.

Every figure is compared with a period before. By default, the same length of time just before it. You can choose the same period last year instead, from the menu beside the dates.

Like for like. Rolling periods made of whole weeks — the last week, the last four weeks — hold the same weekdays as the period before, so a business doing exactly the same shows no change at all. Calendar periods (last month, a quarter, a year) hold different numbers of days or weekdays, so part of any change is the calendar. Glancely says so when that is the case.

Pick a period from the list, or choose any dates in the calendar, then press Apply.
